PASTA FAGIOLI (A Wonderful Italian Bean Soup)
I love this wonderful soup. My mother-in-law recommended it to me and it has quickly become a family favorite. Of course with my husband's Italian/Sicilian heritage, he loves anything with a pasta in it. This recipe uses my own quarts of processed tomatoes and beans, which make it even more delicious.
1 tbsp. olive oil
4 strips bacon, chopped
1 clove garlic, chopped
1 carrot, chopped
1 onion, chopped
1 rib celery, chopped
1 qt jar stewed tomatoes, or tomato juice.
1 cup of chicken broth
1 qt jar of pinto beans
2 tbsp. parsley, chopped
1 c. Ditalini pasta
In a large pot, saute bacon, garlic, carrot, onion, and celery, in olive oil. Add tomatoes, broth, parsley, beans and pasta. Bring to boil and lower heat to simmer for 30 minutes.
